3 ways with: Avocados

Instagram never needs another picture of somebody’s avocado on toast. The avocado humble-braggers never fail to annoy as you are scrolling through your food with a packet of Hobnobs at your side. So if people are going to persist with these healthy diets, let’s at least make it a bit more interesting.


If you’ve bought avocados and you’re not planning to squash them onto bread, then I am presuming you bought them for nachos. Great choice. Everybody needs a failsafe guacamole recipe, and this is it. Add a chopped red chilli if you are feeling rogue.

  • 1 avocado
  • 1 lime
  • 1 red onion, finely chopped
  • big bunch of coriander, chopped
  • salt and pepper

Halve and destone the avocado. Scoop into a bowl and add the onion and zest of the lime. Mash lightly with a fork. Add the coriander, plenty of seasoning and the juice of half the lime. Taste, and add more seasoning or lime to your preferences.

Avocado eggs

The creamy texture of cooked avocado is a love it or hate it concept, but if you’re a fan then this recipe makes the simplest healthy breakfast – you’ll never go back to the avocado toast.

  • 2 avocados
  • 4 eggs
  • cayenne pepper
  • chives

Halve the avocados and remove the stones. Remove 1tbsp of avocado from each half, to make more room for the egg. Crack an egg into the centre of each half, and sprinkle with seasoning and a pinch of cayenne. Place on a baking tray and bake at 180’C for 15-20minutes, until the egg whites are set.

Green smoothie

Move from humble-bragger to all out smug with pictures of your morning smoothie.

  • 1 avocado
  • 1 mango
  • 2 frozen bananas
  • handful of spinach or kale
  • 250ml milk

Blend all together in a smoothie. Drink and feel virtuous.
