Mug shots: Carrot cake

For anyone already in need of a revision break, this mug cake is the perfect mix of comfort and health, with an added hint of Easter to remind us of carefree holiday times. 

Easy to knock up just one serving, this little creation is perfect for anyone with limited cooking facilities. And can be made vegan very easily!


6 tablespoons plain flour

2 tablespoons sugar (brown recommended for gooeyness, but white is of course fine)

1/4 teaspoon baking powder

1/4 teaspoon salt

Pinch of cinnamon/nutmeg (or both)

6 tablespoons milk

2 tablespoons vegetable oil

3 tablespoons grated carrot

1 tablespoon raisins (optional)


This incredibly easy, simply combine the ingredients in a large-ish mug, and microwave on high for 2 minutes (maybe more depending on the microwave).

Top with honey, syrup or cream cheese icing (cream cheese mixed with icing sugar), for a warm and moist mini carrot cake.
